In Windows, this is specified in the maker.ini file.
Bring up Help > Online Manuals, select Customizing FrameMaker Products
In the online help file, read "Mappings for unavailable fonts" on p. 28.

On UNIX, this is specified in the .../fminit/fontdir/fontlist file.
Click on the HELP button, select Online Manuals and then Managing Fonts.
In the online help file, read "Adding font mappings" on p. 35.
